Do you find that January needs a little pick me up, something fun to celebrate? The girls of The Bakers Party Shop, Esther and Shauna, have turned this month into “Hot Cocoa” month. They are sharing a deliciously fun and simple recipe for hot cocoa rice crispy treats drizzled with white chocolate and topped with mini chocolate chips and tiny marshmallow. These go perfect with a warm cup of hot cocoa and will surly brighten any January day!

Hot Cocoa Rice Crispy Pops: makes 8 rectangle treats
6 cups Cocoa Krispies
1- 10.5 oz bag mini marshmallows (because they melt better)
4 tbsp unsalted butter
2- 1.5 oz packets of instant hot cocoa mix
1/8 tsp sea salt
ghirardelli white chocolate candy melts for drizzling
mini chocolate chips
tiny marshmallows
jumbo heart sprinkles
wooden red glitter treat sticks
Directions:
In a large pot melt the butter, then add the marshmallows. Stir constantly until the marshmallows are completely melted, then add the hot cocoa mix and mix until all the powder dissolves. Next add the Cocoa Krispies and sea salt, mix until all the cereal is completely coated. Line a 9×9 inch square baking pan with parchment paper and spray with non-stick spray. Press mixture evenly into the pan and cool completely before cutting.
Once cooled to make the pops shown lift the rice crispy treat from the pan and place on a cutting board. Cut the square in half then cut each piece in half again so you have 4 squares that you will cut in half again to get 8 long rectangle treats. Insert a treat stick in the bottom of the treat if you are making pops on a stick. Place the treats on a piece of wax or parchment paper.
To decorate your treats in a quart size freezer bag melt some of the Ghirardelli white chocolate melting chips per package instructions. Once melted, snip the very end of one of the bottom corners of the bag with a scissor. Drizzle the chocolate on the tops of your rice crispy treats. Sprinkle on mini chocolate chips and tiny marshmallows and add a jumbo heart sprinkle in the middle. You now have a yummy “hot cocoa” style rice crispy treat to enjoy! These are so sweet they would be perfect for Valentine’s Day too!
