As with many of my crockpot recipes, I make large batches so I can freeze half and use the remainder for dinners.
Ingredients:
2 lbs Stew Meat – browned
2tbsp – butter
Potatoes
2 Large Carrots – Sliced
1.5 cups Green Beans
1.5 cups Corn
1.5 cups Peas
32 oz Beef Broth
32 oz hot water
1 packet Onion Soup Mix
1 packet Stew Seasoning Pack
Directions:
1) I estimate how many potatoes I need by peeling them, and placing them whole in the crockpot until it’s about 3/4s full. I then cut them into cubes and return to the pot. I chop the carrots, onion, and green beans place all in the pot.
2) Pour in broth, hot water, and seasoning
4) Brown stew meat in skillet. Add to mixture. (I like to wait until the broth, water, and veggies are hot to maintain proper meat temperature)
3) Cook on low for 6-8 hours (depending on your own crockpot) or on high for 4-6 hours.
What’s great about stew is you can easily change the ingredients depending on what you have laying around. I’ve used russet potatoes, reds, and yellows. I’ve used celery, beans, and rice. I’ve added beef, pork, chicken, and have kept it plain veggie. I’ve tossed in left over gravy and mashed potatoes. It’s all delightful and filling every way! Get creative!
