With Mother’s Day right around the corner, we’re excited to share some inspiration for celebrating the queen of your heart…mom! Often times, it can be a bit difficult trying to figure out how to celebrate mom in a special way. What I’ve come to find is that it isn’t always about the amount you spend on a gift, but more so the thought that goes into showing how much you care. So this year, in addition to that special gift she’s been dying for and a nice dinner, add something thoughtful, straight from the heart that she’ll remember for years to come.
If you have children in preschool, you may have attended a “Muffins with Mom” breakfast at your child’s school. These type of Mother’s Day celebrations are easy to do and teach children the value of showing appreciation. Whether your child’s school does this it or not, this would be an awesome tradition to incorporate annually in your home. Mothers can take the lead and enjoy a fun morning of bonding with your son and/or daughter, or dad and the kids can invite mom to the breakfast table for a sweet surprise on Mother’s Day morning! Along with enjoying delicious muffins, if you have younger children, a thoughtful keepsake they can present to mom is a self-illustrated book, which can be found at Target or made using construction paper or cardstock. To ensure your “Muffins with Mom” breakfast is perfect, adorn the table with a vase of beautiful flowers, pour her a glass of OJ, and try this simple chocolate chip muffin recipe: Chocolate Chip Muffins
Makes 12 – 18 muffins
INGREDIENTS
2 cups all purpose flour
1/3 cup brown sugar
1/3 cup sugar
2 teaspoons baking powder
3/4 cup melted butter
2/3 cup milk
2 eggs
1 teaspoon of vanilla
1-11 1/2 ounce package of Nestle Toll House chocolate chips
DIRECTIONS
- Preheat oven to 400°F.
- Place 12 – 18 muffin liners in your muffin pan.
- In a medium bowl, stir together flour, sugars, and baking powder.
- In another bowl, stir together milk, eggs, butter, and vanilla until blended.
- Pour milk mixture into dry ingredients, and stir until a combined batter is formed.
- Stir in chocolate chips. Spoon batter into muffin liners.
- Bake for 15-20 minutes.
- Cool for 5 – 10 minutes.
- Serve warm or store in tupperware and eat cooled.
