Easter Bunny Ear Cookies & Marshmallow Bunny Tails & Display Ideas
We are sharing with you some simple and fun treats you can make for Easter or springtime celebrations! These would be a perfect project to do with your kids! Bunny ear cookies and mini marshmallow bunny tail bites, what could be cuter! With a few store bought ingredients, some of our fun sprinkles, Easter printables and of course flowers you can create a fun springtime display in no time!
Spring is almost here so that called for taking a trip to Trader Joe’s to get some pretty spring flowers. Little did I know that I would also find some cookies there that would inspire this blog post! I came across some Palmier cookies as I was headed down the aisle and as I looked at them I thought they look like bunny ears! They are a crisp puff pastry cookie that is slightly sweet. You can eat them on their own, spread a little jam on them or turn them into bunny ears like we did making them perfect for Easter celebrations. The bonus is how easy they are to turn into bunny ears!
To make the Easter Bunny Cookies: You can decorate the cookies in a variety of ways. One way is to dip each side of the top of the cookie (the top of each “ear”) in melted chocolate flavor of your choice and sprinkle with our pretty pastel rainbow non pareils. A second way is to drizzle some melted chocolate in a fun criss cross pattern and sprinkle with sprinkles. The third way is to drizzle some melted chocolate in an elongated oval in the center of each side of the cookie. Sprinkle light pink sanding sugar on the melted chocolate to really make them look like bunny ears! The size of these cookies fit perfectly in our pint size berry baskets with a little crinkle paper in the bottom of the basket to prop the cookies up a bit.
So what goes with bunny ear cookies you say?! How about some mini marshmallow bunny tail bites! These are a super quick and easy Easter treat to make! You can fill plastic Easter eggs with them or display them in half pint berry baskets. Since it is hard to resist Cadbury mini eggs this time of year we stuck in a few of those in with the bunny tail bites too.
To make mini marshmallow bunny tails: Melt white chocolate per instructions. We used Merkens white chocolate for this project and the bunny ear cookies. Ghirardelli white melting candy discs work great too if you are not able to find Merckens. They both have a nice taste and melt well. Dip the ends of mini marshmallows in the melted chocolate and lightly shake off any excess then roll in white sanding sugar. Place on a piece of wax paper to let the chocolate set up.
Once you have your treats made you can incorporate them into a pretty Easter display with a few other fun elements. As you know Forever Your Prints has some wonderful printable designs for every occasion! Some of their Easter Printables were used in this post. The water bottle printables look darling on some small milk bottles filled with pink lemonade. We clipped a tag to the pint size berry basket to give some extra decoration. To make your display you can add some pretty spring flowers in a vase or two, hang a polka dot feltfetti garland by Benzie Designs (they can make them in whatever colors you need!), scatter some of our tiny tissue paper honeycomb balls around the tabletop and there you have a darling display for Easter that is quick, easy and oh so pretty!
