We just added lots of fun new candy molds to our shop. When we saw the new jumbo 3.75” round lollipop mold we just knew you could do all kinds of fun things with it! Our fish candy mold is the perfect chocolate accent to add to the top of our jumbo round lollipop to turn them into under the sea lollipops!

To create your own under the sea chocolate lollipops pick out some chocolate candy melts in a couple colors to create the “school” of fish that will go on the top of the round lollipop. We knew we wanted a pretty blue color for the “water” that would be used in the jumbo round mold and thought red and yellow would be fun for the fish. Use whatever colors you are drawn to or to coordinate to your party or event.

To create the look of “sand” for the bottom sea you will need a couple items from the grocery store. Betty Crocker White Cookie Icing was used to drawn on the mounds of sand to look like the ocean floor on the bottom part of the lollipop. We used this icing on a previous project and like how easy it is to use, outlines shapes and floods well providing you a smooth surface to apply sprinkles or other decorations to before it dries. Act fast as it does set up pretty quick and then needs a few hours to fully dry. For the sand we thought light brown sugar that you use in baking would work but remembered that it is moist and moisture with chocolate can sometimes not be a good thing. Scoping the shelf in the grocery store for something else that might work we spotted a new item called Organic Coconut Palm Sugar and it looked just like sand so we thought we’d give it a try!

Now it was time to get the under the sea lollipop project started!

Step 1: Melt some of the blue candy melts in batches per the package directions. Since these are very large lollipops we melted about ½ cup of the candy melts per pop. Once the candy mold was filled with the melted blue candy lightly tap the mold on the counter to help any air bubbles in the chocolate come to the surface.

Step 2: Place a 4.5” white paper lollipop stick in the recess of the mold. Lightly spin the end of the lollipop stick so the end of the stick that goes into the pop gets covered in chocolate so it adheres to the pop. Allow the pops to fully set up.

Step 3: Melt the colors you want to use for you fish. You do not need a lot if you are using our fish mold as the fish are pretty small. Fill as many fish as you want for your pops and allow them to fully set up as well.

Once the chocolate lollipops and fish are fully set carefully pop them out of the candy molds and set them on a clean flat surface. Now it is time to add the “sand” for the bottom of the sea.

Step 4: Draw on the bottom of the sea using the icing writer. Once you fill in your outline and it smoothes out sprinkle on the coconut palm sugar to give the appearance of sand.

Step 5: Add a small drop of the icing to the back of the fish you are using. Place the fish where you’d like above the “sand”.

Step 6: To make the “bubbles” use the end of a toothpick and add a small drop above the fish then place a baby white sugar pearl on each drop of icing. Allow your pops to set up for a good hour or more so things don’t shift and the icing can fully set. If you are in a warm area it may take longer. If you plan to package them in a bag let them set up even longer to make sure the icing is fully set.
